Would it be appropriate to list a professor as a reference if he/she taught a journalism course and is a writing/journalism professional who can vouch for your skills, so to speak?
That also said, would stories written for the class be considered appropriate samples/clips?

If you’ve never done an internship, and have no other options, I would ask a professor for a recommendation, especially if they can speak to your work ethic in class and your abilities.
However, if you have experience, you should just ask an editor that you’ve worked with, or perhaps your supervisor on the school newspaper/magazine or something.
The same goes for clips. If you have them, send them (whether they are good or bad.) But, if you have nothing, send the articles from class, and be sure to note to whomever you are applying to that these were used for class, and that you have nothing else to send them.
At that point, I would find a way to get some clips (campus newspaper, local magazine, start-up website, etc.) That’s the best way to go!
