So I have an interview next week with a local university. It’s for an Editorial Assistant position with the Family and Preventative Medicine dept. Basically, I’d be proofreading manuscripts to be published in the American Journal of Preventative Medicine. Since this is geared towards the medical field, I don’t know what to expect.
Can anyone give me some advice as to what to expect at the interview? Will they give me an edit test?

An edit test is almost a certainty. Try to find out what style the journal uses and familiarize yourself with the general points - comma placement, citation format, etc. I did some Googling and it looks like it’d be either NLM (National Library of Medicine) or AMA (American Medical Association) style.
Also, I don’t want to sound too nit-picky, but I saw on its website that it’s the American Journal of Preventive Medicine. Maybe you just mistyped, but it’d be bad if you happened to call the publication by the wrong name. :)

Does anyone know if edit tests are usually taken home?
The publication is called the American Journal of Preventative Medicine, but the actual dept. at the University is called the Family and Preventative Medicine Dept.
